As a chef trying to work up the ladder, the "4 places I've lived" is wide open, but now I'm happy to be back in upstate New York. I'm trying a variation of your Miche, which I did verbatim with great results a couple of days ago. I want to see what happens with the addition of Spelt and a bit more Rye Flour. My roots as a line cook can't resist the tweaking you wrote about even though I know I need to follow formulas for a reason in bread making. Take care. I hope you feel better soon.
