I am almost through the nitty-gritty science chapter and have learned so much about yeast, gluten, sugars, molecules, bonds, and all sorts of other factors influencing bread. Emily Buehler gives the full story with loads of bibliography references (I love a good bibliography!) The heavy science is nicely packaged into a chapter that is not a prerequisite to actually using the book to bake bread; she even suggests if you want to get to baking, just jump ahead to the other chapters. I have no doubt I will be turning out some great bread as I work my way through the book. Thanks again Susan for the book, and it was great to meet you at the conference.
